Simply put, milling is the process in which the malt kernels are crushed into smaller particles and prepared for the next two steps, mashing and lautering.

3. Mashing: In this step, the milled malt, also called grist, and water is blended in the mash tun. This mixture is heated at 100 degrees to 170 degrees Fahrenheit. During mashing, the high temperature activates the natural enzymes in the malt that convert starches into sugar which eventually becomes alcohol. After the mashing is done, the water is drained from the mash, a sweet and sticky liquid containing sugar from the grains.

4. Lautering: The brewery has a separate lauter tun where the husks sink and the wort is separated from the spent grains (solid substances). Lautering is classified into three steps:

Mashout: The enzymatic reactions stop and the fermented sugar of the wort is preserved when the mash temperature is increased to 170 degrees Fahrenheit. This makes the wort less sticky and easier to process.

Recirculation – The wort is recirculated from the lauter tun’s bottom to filter the loose grain particulates. This produces wort with better clarity.

Sparging – The spent grain is rinsed with hot water to extract sugar as much as possible from the remaining mash.

Carbonation is done naturally (yeast) or by adding carbon dioxide under high pressure (also called force carbonation). Generally, breweries carry out force carbonation to speed up the manufacturing process.

9. Filling: The last but not the least step of beer manufacturing is filling in which the filtered beer is filled into bottles and cans using counter pressure. The beer bottles and cans are then supplied to the liquor delivery stores, bars and off-license.
